He has a habit of holding fluid in his mouth and then if he breathes he chokes. Does anyone have someone who experiences this and, if so, are there any remedies for this?

It sounds like it may be what is called "pocketing" which often occurs with folks with dementia as they tend to hold or pocket their food in their mouths. I'm sure whether it's food or drink being held it's still considered pocketing.
Have you mentioned this to your husbands doctor? And while you don't mention your husband having any dementia, I can only guess that he more than likely does have it since he's now pocketing fluids, so I would talk to his doctor about that as well.
But know that there is no cure for dementia nor any magic pill to stop it.
So make sure that you have all your legal paperwork in order now before your husband gets any worse.

Should have a doctor do a swallow test, he may need a thickener for liquid.
Meanwhile:
He could be forgetting to swallow, so you may need to remind him.

Post stroke patients can still decline after several years. Swallow difficulties can lead to chronic aspiration and infections. It is time for a speech swallow testing. Expect adjustments in feeding next.
